食品安全菌生产蔗糖异构酶的研究进展

摘要: 分析蔗糖异构酶的来源、结构和反应机理,综述近十年利用食品安全菌株异源表达蔗糖异构酶的研究进展以及现阶段生产蔗糖异构酶的优化策略。最后,对蔗糖异构酶的研究进展进行总结,指出当下蔗糖异构酶研究的不足,并从表达宿主菌株改造和蔗糖异构酶编码基因改造两个方面展望其今后的研究方向,为利用食品安全菌株生产异麦芽酮糖提供理论依据。

Abstract: The source, structure and reaction mechanism of sucrose isomerase in recent years were introduced. The research progress of heterologous expression of sucrose isomerase by food safety strains in recent ten years was summarized. The research pointed out the shortcomings of sucrose isomerase and prospected the future research direction from two aspects: the transformation of the expression host strain and the transformation of the encoding gene of sucrose isomerase.
