Abstract: Based on the safety of Hizikia fusiformis, the H. fusiformis extracted by ethanol was used to investigate the blocking effect of different concentrations of ethanol extracts on the synthesis of nitrosamine and the ability to remove nitrite. The detection of heavy metals referenced inductively coupled plasma mass spectrometry, and the pesticide residue detection method referenced gas chromatography mass spectrometry; the H. fusiformis was extracted with 0, 25%, 50%, 75% and 100% ethanol, respectively. The blocking effect of the extract on the synthesis of nitrosamines was determined by α-naphthylamine method.The ability of the extract to remove nitrite was determined by the color reaction of naphthalene ethylenediamine hydrochloride. The content of heavy metals in H. fusiformis was within the safe range, and the pesticide residues were not detected. When the ethanol concentrations were 50% and 75%, the blocking rate of the synthesis of nitrosamine was 100%; when the ethanol concentration was 75%, H. fusiformis extract had the best ability to remove nitrite with the removal rate of 53.33%. H. fusiformisdid not have pesticide residues, which extract could effectively block the synthesis of nitrosamines and removed nitrite and can be used to develop new anti-cancernatural healthproducts.
