野生与人工养殖虎斑乌贼墨的生化组分分析与比较

Analysis and comparison of biochemical composition in squid ink between wild and cultured Sepia pharaonis

摘要: 对野生与人工养殖虎斑乌贼墨的营养成分进行分析比较,旨在为其开发利用提供理论依据。采用国家标准方法测定其水分、灰分、粗蛋白、粗脂肪、多糖、氨基酸、脂肪酸、矿物质元素的含量。结果表明:野生与人工养殖虎斑乌贼墨中的水分含量差异不显著(P>0.05),其他基本营养成分含量(鲜样基础)均差异显著(P<0.05)。富含多糖,且野生乌贼墨(3.25%)< 养殖乌贼墨(3.98%)。两种墨中均含有7种必需氨基酸、10种非必需氨基酸及9种药用氨基酸,野生乌贼墨必需氨基酸(3.72%)> 养殖乌贼墨(3.22%);野生乌贼墨药用氨基酸(5.86%)< 养殖乌贼墨(6.23%),分别占氨基酸总量的56.78%、64.41%。两种墨均仅含5种脂肪酸,不饱和脂肪酸含量差异显著(P<0.05),野生乌贼墨不饱和脂肪酸(41.46%) > 养殖乌贼墨(29.18%)。在测定的4种常量元素(K、Na、Ca和Mg)及7种微量元素(Zn、Cu、Fe、Mn、Sr、Al和As)中,除Mg、Mn和Al外,其他8种元素差异显著(P<0.05)。其中微量元素(Zn)含量较高,且养殖墨(5.40±0.71)mg/g>野生墨(3.89±0.19)mg/g。综上所述,人工养殖虎斑乌贼墨富含营养价值和药用、保健功能,具有良好的开发前景。

Abstract: This study was conducted to provide a basis for the research and development of the nutrient composition in squid ink between wild and cultured Sepia pharaonis. The moisture, crude ash, crude protein, crude fat, polysaccharide, amino acids, fatty acids and minerals were determined by national standard nutritional method. The results showed as follows: the moisture of wild and cultured Sepia pharaons squid ink was not significantly different (P>0.05), whereas other basic nutrient contents (dry weight basis) were significantly different (P<0.05). The content of polysaccharide was abundant and in wild squid ink (3.25%) with cultured squid ink (29.18%). 4 kinds of constant elements (Na, Ca, K and Mg) and 7 kinds of trace elements (Cu, Fe, Zn, Al, Mn, Sr and As) were determined, and 8 kinds of elements showed significant difference (P<0.05) with the exception of Mg, Mn and Al. The trace element (Zn) was high, with cultured squid ink (5.40±0.71)mg/g>with wild squid ink (3.89±0.19)mg/g. In conclusion, cultured Sepia pharaonis squid ink has higher nutritional value, medicinal and health care function, with promising further development.
