摘要: 脱氧雪腐镰刀菌烯醇(deoxynivalenol,DON),又名呕吐毒素(vomitoxin,VT),是由某些镰刀菌产生的一种真菌毒素,广泛存在于玉米、大麦、小麦等农产品及饲料中。DON对人类以及各种动物有着广泛的毒性效应,可引起多种细胞的凋亡,从而对机体多个系统产生毒害作用,如神经毒性、生殖毒性、免疫毒性以及 “三致”作用等。本文将从DON的理化性质,污染状况,毒性作用以及展望进行阐述,为真菌毒素毒性的进一步研究提供理论基础。

Abstract: Deoxynivalenol (DON) is also called vomitoxin (VT) which is a mycotoxin produced by some Fusarium, and widely exists in corn, barley, wheat, and other agricultural product and feedstuff. DON has a wide toxic effect on human and different species of animals. DON can cause the apoptosis of various cells, and produce toxic effects on the body system, such as the neurotoxicity, reproductive toxicity, immunotoxicity, carcinogenesis, misshapen effect and mutagenesis etc. This paper reports the physical and chemical properties, contamination, toxic effects and the outlook of the DON, to provide theoretical basis for the study of mycotoxin toxicity.
